  • bell peppers (50g)

Step 1: Prepare Ingredients for Chicken Fried Rice

Gather and prepare all the ingredients: 2 cups cooked jasmine rice, 1 pound chicken breast (cubed), 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 2 eggs, 1 cup mixed vegetables (carrots, peas, corn), 2 tablespoons vegetable oil, 2 cloves garlic (minced), 1 small onion (chopped), and salt and pepper to taste.

Step 2: Cook the Chicken

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add chicken pieces, season with salt and pepper, and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Step 3: Scramble the Eggs

In the same pan, add a little more oil if needed, crack in the eggs, and scramble until cooked. Add them to the cooked chicken and set aside.

Step 4: Stir-Fry Vegetables & Rice

Add the remaining oil to the pan. Sauté the onion and garlic until fragrant, about 1 minute. Add mixed vegetables and stir-fry for another 2-3 minutes. Add the cooked rice, soy sauce, and oyster sauce, and stir-fry for 4-5 minutes. Return the chicken and eggs to the pan and combine well. Adjust seasoning with salt and pepper.

Step 5: Prepare the Salad

For the salad, you will need: 4 cups mixed salad greens, 1 cup cherry tomatoes (halved), 1 cucumber (sliced), 1/4 red onion (thinly sliced), and 1/4 cup vinaigrette dressing. Toss all salad ingredients together in a large bowl.
