  • eggplant (200g)
  • cheese suluguni (100g)
  • olive oil (20g)
  • garlic (5g)
  • spinach (30g)
  • salt (2g)
  • pepper (1g)

Cooking Time: 10 minutesPreperation Time: 30 minutes

Step 1: Prepare the Eggplant

Slice the eggplant lengthwise into thin strips. Sprinkle with salt and let them sit for 20 minutes to draw out excess moisture. Pat them dry with a paper towel.

Step 2: Grill the Eggplant

Brush the eggplant slices with olive oil and grill them over medium heat for about 3-4 minutes on each side or until they are tender and have nice grill marks.

Step 3: Prepare the Filling

In a bowl, combine diced suluguni cheese, minced garlic, chopped fresh basil, parsley, and a pinch of black pepper.

Step 4: Assemble the Rolls

Place a spoonful of the filling on one end of each eggplant slice. Roll up the slice tightly and secure it with a toothpick if necessary.
