Gather Ingredients

- 3 large eggs - 2 sausages, sliced - 1 tomato, diced - 1/2 cup shredded cheese (cheddar, mozzarella, or your choice) - Salt and pepper to taste - 1 tablespoon olive oil or butter

Prepare Sausages

In a skillet over medium heat, add the olive oil or butter. Once hot, add the sliced sausages. Cook until they are browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Cook Tomatoes

In the same skillet, add the diced tomatoes. Cook for 2-3 minutes until they are slightly soft. Remove from the skillet and set aside with the sausages.
