Creamy Polenta

1. Bring 4 cups of water to a boil in a large pot. 2. Add 1 teaspoon of salt. 3. Gradually whisk in 1 cup of coarse cornmeal. 4. Reduce the heat to low and cook, stirring frequently, until the polenta thickens, about 30 minutes. 5. Stir in 2 tablespoons of butter. 6. Serve hot as a creamy side dish or let it cool and solidify for other preparations.
