  • rice (200g)
  • mussels (80g)
  • shrimp (60g)
  • squid (60g)
  • tomato sauce (50g)
  • parsley (10g)
  • olive oil (20g)
  • garlic (5g)

Ingredients

2 tbsp olive oil, 1 onion (chopped), 1 red bell pepper (chopped), 3 cloves garlic (minced), 1/2 tsp paprika, 1/4 tsp saffron threads, 2 cups short-grain rice, 1/2 cup dry white wine, 4 cups chicken or fish stock, 1 cup peas, 12 large shrimp (peeled and deveined), 12 mussels (cleaned), 12 clams (cleaned), 1/2 cup chopped parsley, 1 lemon (cut into wedges), salt and pepper to taste.

Instructions

1. Heat the olive oil in a large paella pan or skillet over medium heat. 2. Add the chopped onion and red bell pepper, and sauté until softened. 3. Stir in the minced garlic, paprika, and saffron threads, and cook for another 2 minutes. 4. Add the rice and stir to coat with the oil and spices. 5. Pour in the white wine and cook until absorbed, about 2 minutes. 6. Gradually add the stock, stirring occasionally, and bring to a simmer. 7. Reduce the heat to low, cover, and cook for about 15 minutes, or until the rice is nearly tender. 8. Stir in the peas, shrimp, mussels, and clams, and cook until the seafood is cooked through and the shellfish have opened, about 5-7 minutes. 9. Remove from heat and sprinkle with chopped parsley. Serve with lemon wedges and season with salt and pepper to taste.
