  • spaghetti (100g)
  • beetroot (50g)
  • shrimp (50g)

Prepare Ingredients

1. Peel and finely chop 2 medium-sized beetroots. 2. Peel and devein 200g of shrimp. 3. Mince 3 cloves of garlic. 4. Finely chop 1 small onion. 5. Chop 1 tablespoon of fresh parsley for garnish.

Cook Beetroot

1. In a large pan, heat 2 tablespoons of olive oil over medium heat. 2. Add the chopped onion and garlic, sauté until translucent. 3. Add the chopped beetroot, cook for about 10-12 minutes until the beetroot is tender.

Cook Spaghetti

1. While the beetroot is cooking, bring a large pot of salted water to a boil. 2. Add 200g of spaghetti to the boiling water and cook according to package instructions until al dente. 3. Drain the spaghetti, reserving a cup of pasta water.

Cook Shrimp

1. Add the shrimp to the pan with beetroot, cook for about 3-5 minutes until shrimp are pink and cooked through. 2. Season with salt and pepper to taste.

Combine and Serve

1. Add the cooked spaghetti to the pan with beetroots and shrimp. 2. Toss everything together, adding some reserved pasta water if the dish needs more moisture. 3. Serve in bowls, garnished with chopped parsley.
