Step 1: Prepare the Rice
Rinse 2 cups of sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions or using a rice cooker. Once cooked, transfer the rice into a wooden or glass bowl and add 1/4 cup of rice vinegar, 2 tablespoons of sugar, and 1 tablespoon of salt. Mix gently and allow the rice to cool to room temperature.
Step 2: Prepare Fillings
While the rice is cooling, prepare the fillings. Slice fresh fish like salmon or tuna into thin strips. Cut vegetables such as cucumber and avocado into similar-sized strips. You can also use cooked shrimp, crab sticks, or tofu as additional fillings.
Step 3: Rolling the Sushi
Lay a sheet of nori (seaweed) on a bamboo sushi mat, shiny side down. With wet hands to prevent sticking, spread a thin layer of rice over three-quarters of the nori sheet. Arrange your chosen fillings in a horizontal line across the center of the rice.
Step 4: Roll and Seal the Sushi
Using the bamboo mat, carefully roll the nori over the fillings, pressing gently to shape the roll. Continue rolling until the seam of the nori is on the bottom. Apply slight pressure to shape and seal the roll.
Step 5: Cut and Serve
Using a sharp knife, slice the sushi roll into 6-8 equal pieces. Serve with soy sauce, pickled ginger, and wasabi on the side.
