Step 1 - Prep the Ingredients

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan. Peel, core, and chop 3 medium apples into small pieces. Set aside.

Step 2 - Mix the Dry Ingredients

In a large bowl, whisk together 2 cups of all-purpose flour, 1 1/2 teaspoons of ground cinnamon, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.

Step 3 - Prepare the Wet Ingredients

In another bowl, beat 1 cup of granulated sugar, 1 cup of brown sugar, 1 cup of vegetable oil, and 2 teaspoons of vanilla extract until well combined. Add in 3 large eggs, one at a time, beating well after each addition.

Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the chopped apples.

Step 5 - Bake the Cake

Pour the batter into the prepared cake pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
