- cream cheese (150g)
- dark chocolate (100g)
- sugar (80g)
- eggs (60g)
- flour (40g)
- butter (30g)
- cocoa powder (20g)

Step 1: Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, combine 1 1/2 cups of crushed chocolate wafer cookies with 1/4 cup of melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
Step 2: Make the Filling
In a large mixing bowl, beat 24 ounces of cream cheese until smooth. Gradually add 1 cup of granulated sugar, 1/4 cup of unsweetened cocoa powder, and 3 large eggs, one at a time, beating well after each addition. Stir in 8 ounces of melted semi-sweet chocolate, 1 teaspoon of vanilla extract, and 1/2 cup of sour cream until thoroughly combined.
Step 3: Bake the Cheesecake
Pour the filling over the cooled crust. Place the springform pan in a larger baking pan and add hot water to the larger pan to reach halfway up the sides of the springform pan. Bake for 55-60 minutes, or until the center is just set and the top looks slightly glossy. Remove from the oven and let it cool in the water bath for 15 minutes. Remove from the water bath and cool completely at room temperature. Refrigerate for at least 4 hours or overnight.
Step 4: Serve
To serve, carefully run a knife around the edge of the springform pan to release the cheesecake. Remove the sides of the pan and transfer the cheesecake to a serving platter. Garnish with chocolate shavings, whipped cream, or fresh berries if desired. Slice and enjoy!
