Ingredients

2 eggs 1/4 cup milk Salt and pepper to taste 1 tbsp olive oil 1 cup mixed salad greens 1 tbsp vinaigrette dressing 1 slice of whole grain bread

Instructions

1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined. 2. Heat olive oil in a non-stick skillet over medium heat. 3. Pour the egg mixture into the skillet and let it cook for about 2-3 minutes, lifting the edges to let the uncooked egg flow underneath. 4. Once the omelette is almost set, fold it in half and cook for another minute. 5. In a separate bowl, toss the mixed salad greens with the vinaigrette dressing. 6. Serve the omelette hot with the mixed salad and a slice of whole grain bread on the side.
