Ingredients
- 1 lb asparagus, trimmed and cut into 2-inch pieces - 1 lb shrimp, peeled and deveined - 2 cloves garlic, minced - 2 tablespoons olive oil - 1 tablespoon lemon juice - Salt and pepper to taste - Mixed salad greens - Cherry tomatoes, halved (optional) - Avocado slices (optional)
Instructions
1. Blanch the asparagus in boiling water for 2-3 minutes until tender-crisp. Drain and set aside. 2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add shrimp and garlic, cooking until shrimp are pink and opaque, about 3-4 minutes. 3. In a large bowl, combine the blanched asparagus, cooked shrimp, and mixed salad greens. Add cherry tomatoes and avocado slices if using. 4. In a small bowl, whisk together the remaining 1 tablespoon olive oil and lemon juice. Drizzle the dressing over the salad. 5. Toss the salad gently to combine. Season with salt and pepper to taste. 6. Serve immediately.
