Vareniki with Cheese (Вареники з сиром) are a traditional dish from Eastern European cuisine, particularly popular in Ukrainian cooking. These dumplings are very similar to pierogi but are typically filled with cheese, making them a delightful treat that balances the richness of dairy with the soft, chewy texture of the dough.   • water (100g)
  • egg (50g)
  • salt (1g)
  • potatoes (200g)
  • onion (30g)
  • cheese (50g)
  • sour cream (40g)

Ingredients Prep

Combine roughly 150g of flour, water (variable amount), 1-2 eggs, and salt to taste in a large mixing bowl to prepare the dough. For the filling, mix approximately 200g of mashed potatoes, 30g of finely chopped onion, and 50g of cheese (optional but recommended for cheese vareniki). Separately, have 30-50g of sour cream ready for serving.

Dough Making

Knead the dough until smooth and elastic. Let it rest for about 30 minutes, covered, to ensure it's easier to work with.

Filling and Forming Vareniki

Roll out the dough on a floured surface to about 1/8 inch thickness. Cut out circles using a cookie cutter or a glass. Place a spoonful of the potato-cheese mixture in the center of each circle, fold the dough over the filling, and pinch the edges to seal.

Cooking

Bring a large pot of salted water to a boil. Cook the vareniki in batches, ensuring they don't stick to each other. They're ready when they float to the surface, about 3-5 minutes. Serve hot with a dollop of sour cream on top.
